ZUCCHINI & MUSHROOM STIR FRY

I love a simple stir fry because you can literally throw in anything you have on hand, add some sauce and call it a meal! Feel free to get creative and add in your favorite veggies, this recipe is super versatile!

Quick and easy stir fry to whip up for a simple meal prep or a filling weeknight meal!


Ingredients


  • 1lbs or 3 large chicken breast

  • 3 medium zucchini

  • 2 cups sliced baby Bella mushrooms

  • diced onion & minced garlic to taste

  • 1/3 cup Low Sodium soy sauce

  • 1/3 cup coconut aminos (mine is on the sweet side, you can sub for 1 Tbsp honey)

  • 2 Tbsp Garlic powder

  • 2 Tbsp Onion Powder

  • 1 Tbsp Corn Starch (to thicken the sauce)

  • Salt & Pepper to taste


Directions


  1. Start by dicing your chicken breast into bite sized pieces and cook it on a medium heat skillet with garlic powder, onion powder, salt and pepper until fully cooked through, remove from skillet once done.

  2. Slice your zucchini (any any other veggie you like!) then throw into the skillet where you cooked the chicken and add in soy sauce, coconut aminos or honey, garlic, onion, and corn starch. Let cook for a couple of minutes until veggies are tender and sauce thickens a bit.

  3. Add chicken back into the skillet and stir until sauce coats everything evenly, *Serve over rice or noodles for a filling meal!*
