If you think you’re not a cauliflower fan, this is a great recipe to try! It has so much flavor you won’t believe that its ZERO POINTS! This is what made me fall in love with cauliflower rice and now I use it to keep tons of dinners low in points while having big portions! Great for a dinner side or meal prep, don’t miss out on this recipe!
INGREDIENTS
1 bag frozen cauli-rice with carrots and peas
1 can rotel (Don’t drain)
Fajita seasoning (OR garlic powder, onion powder, salt and pepper)
1 Tsp Chili powder
1 Tsp Cumin
DIRECTIONS
Throw everything in a pan on medium-high heat and cook for 10 minutes, covered.
2. Stir occasionally so it doesn’t burn!
3. Then take the lid off and let is finish on medium heat for about 5 minutes until it softens and all liquid is evaporated!
