Yields 3 one cup servings at 139 calories,
INGREDIENTS
1 bag of baby potatoes (I used red potatoes but you can use Yukon golds or whatever you like!)
Minced Garlic
Butter Spray or melted butter (optional to top them before baking)
Garlic Pepper (this is a McCormick seasoning blend but anything you like is great!)
Salt and pepper to taste
DIRECTIONS
Wash potatoes and add them to a pot, cover them with water and boil for 8-10 minutes until potatoes are fork tender but not so soft they are falling apart.
Drain potatoes and add them to a baking pan lined with foil and pam/cooking spray.
Use a wooden spoon or anything flat to smash each potato down until they are about 1/2 inch thick.
Top with minced garlic, butter spray or melted butter, salt, and garlic pepper (or any seasoning, rosemary would be great!).
Bake at 425 for 20 minutes until potatoes are golden brown and getting crispy!
