Stir-fry is one of the best things to throw together when you don’t really know what to make. You can customize it to your liking, add all of your favorite veggies, use beef or chicken, make it meatless, spicy, mild, rice, noodles, the possibilities are endless! A little soy sauce and your favorite Asian-Inspired sauce to top it off and you have an easy weeknight meal!
INGREDIENTS
Diced Chicken (I used pre-cooked but you can dice a chicken breast or 2 and cook that up quick!)
Stir- Fry Veggies (A frozen blend or you can use your favorites! I used 1 zucchini, sliced mushrooms, 1 bell pepper & some snow peas!)
Rice or Lo Mein noodles (I used 3/4 pack of noodles!)
Soy Sauce to taste
Stir Fry Sauce to taste
DIRECTIONS
Cook your noodles or rice according to package instructions
While that is cooking, heat up a skillet to medium heat, add in some olive oil and dice up your fresh vegetables.
Toss your veggies into the skillet and let them cook until tender. I add a few tablespoons of soy sauce, garlic and a pinch of pepper while they cook. Add in cooked chicken and let it heat through completely.
I steamed my snow peas and added them once everything else was tender.
When the noodles are done add them to the pan with the veggies and chicken and top with stir fry sauce.
Stir until well combined and enjoy!
