This recipe is great for a weekend morning or an easy meal prep for the week, switch out sausage for any other breakfast protein or go meatless! It’s also the perfect recipe to add in some extra greens like spinach! Be creative and enjoy!
INGREDIENTS
10 Eggs
1/2 cup Turkey Sausage Crumbles (I used Jimmy Dean brand)
1/3 cup Fat Free Cheddar Cheese
2 cups Hashbrowns (frozen or refrigerated will work)
Salt & pepper to taste
DIRECTIONS
Preheat oven to 400 degrees F.
Spray baking dish with non-stick spray and add in 2 cups hash browns, pressing lightly into the pan to make a crust, top with a little salt and pepper.
Add eggs to a bowl and whisk until all yolks are broken.
Add in sausage, cheese, salt and pepper to the egg mixture and mix until combined.
Pour egg mixture over hash browns and bake for 25 minutes or until eggs are set and firm in the middle.
Cut into 6 equal squares and serve alone or topped with salsa!
