These muffin cups were born from just what I had laying around the house! They turned out amazing and they are so quick and easy, they will definitely be a new breakfast staple for me!
INGREDIENTS
2 bananas (extra ripe is best!)
2 Cups oats (I used quick oats but old fashion or steel cut will work!)
1 Cup milk (I used unsweetened original almond milk)
1/2 cup peanut butter (or any nut butter you have)
1 Tbsp Honey (you can use a tsp of vanilla or any sweetener)
3 Tbsp mini chocolate chips
DIRECTIONS
Preheat oven to 375 F
Mash your bananas well in a large bowl
Add in all of your ingredients and mix until well combined
Divide evenly into 12 muffin cups (spray with non stick oil first)
Bake at 375F for 20-23 minutes, until golden brown and firm in the middle!
YIELDS: 12 muffins at 157 calories each
