This is such a fun side dish and appetizer that’s ww friendly! Basically extra thin potato skins and there’s nothing wrong with that! So easy and delicious and these crisp up great in the oven! Add your own topping and get creative, this is an easy one!
INGREDIENTS
2 large russet potatoes
Salt, pepper, garlic powder, or your favorite seasoning blend (we used a Cajun blend!)
1/2 cup Shredded cheese of choice (I like the Velveeta shreds, they melt great and its point friendly!)
Bacon bits or turkey bacon chopped (I used 4 slices of turkey bacon)
Sour cream or other toppings as desired!
Chives if you’re fancy!
DIRECTIONS
1. Preheat oven to 400 F, line a baking sheet with foil and spray with pam or olive oil spray.
2. Wash potatoes well then slice thinly with a sharp knife, you can use a mandolin but its not necessary, you don’t want them potato chip thin.
3. Once sliced, pat them dry with a paper towel, this will help them crisp up in the oven! 4. Place potatoes in a single layer onto your baking sheet and sprinkle with seasoning, bake for 12-15 minutes until they start to turn golden brown.
5. Take them out of the oven at this point and add your cheese and bacon! I added about ½ cup of cheese over 2 large potatoes and about 5 slices of turkey bacon.
6. Throw them back in the oven and wait for the cheese to melt (2-3 minutes).
7. After they are done top them with sour cream (or ketchup if you’re like Morgan) and enjoy!
