Honey Balsamic Salmon & Veggies


Baked Honey Balsamic Salmon, Roasted potaotes, and green beans with cherry tomatoes.
Yields 2 servings at 496 calories each. (Not including potatoes)

This year salmon has become one of our favorite dinners! It's so easy to cook and there's so many different sauces and seasonings to change up the flavors! This honey balsamic version is so easy and hard to beat! Roasted in the oven or cooked in the air fryer, give this sauce a try! The honey balsamic is the perfect pairing with green beans and cherry tomatoes!


INGREDIENTS

  • Salmon Filets (1 per person, 6oz servings)

  • Fresh Green Beans

  • Cherry Tomatoes

  • 8Tbsp Balsamic Vinegar

  • 4 Tbsp Honey

  • Optional- Minced Garlic

  • Optional Side- Red potatoes

  • Salt & Pepper to taste

DIRECTIONS

  1. Preheat oven to 425 degrees F

  2. Create sauce by adding 4 Tbsp Honey and 8 Tbsp Balsamic Vinegar, add in 1 tbsp minced garlic if desired

  3. Wash green beans & cherry tomatoes then combine half the sauce with them in a bowl and add salt and pepper to taste. (Roast potatoes separately if desired, find my roasted red potato recipe here)

  4. Pour vegetables on one half of a foil lined pan.

  5. Roast veggies for 15 minutes alone before adding salmon

  6. After 15 minutes add salmon to the other side of the pan, salt & pepper to taste then top with remaining sauce and bake for an additional 15 to 20 minutes until salmon is cooked completely.

Optional Air-Fryer Method: Roast vegetables in oven for 25 to 30 minutes. While they cook, preheat air-fryer to 375F. Make a foil boat for your air fryer, add in your salmon, salt, pepper and top with half of the honey balsamic sauce. Air-Fry for 12-14 minutes.
