This easy crustless quiche is great for a weekly meal prep or for a weekend brunch! Simple to throw together and make your own, add any omelet ingredients you love and you have an amazing and easy quiche!
INGREDIENTS
7 large eggs
6 slices of Canadian bacon (or cooked protein of choice)
1 cup diced hash brown potatoes
1/2 cup cheese of choice
Salt and pepper to taste
(Spinach would be good in this too!)
DIRECTIONS
Preheat oven to 350
Cook up frozen potatoes in a skillet on medium high heat until golden brown. I used olive oil spray and a little butter spray as well as salt and pepper.
Once your potatoes are done get a large mixing bowl and whisk your eggs, add in diced Canadian bacon, cheese and salt + pepper to taste.
Once well combined transfer your quiche mixture into a round baking pan greased with Pam or olive oil spray.
Cook at 350 for 17-20 minutes until the egg is set in the middle.
