CAULIFLOWER FRIED RICE

Yields 4 servings at 86 calories each.

I know what you’re thinking, “Ew, cauliflower”, trust me, I said it too! But now that I’ve been able to experiment with cauliflower rice I really think its great! You can make it taste however you want and this recipe is not missing out on those amazing fried rice flavors! Give it a try and let me know what you think, its the perfect meal prepped lunch or dinner addition!


INGREDIENTS

  • 2 packages frozen cauliflower rice medley (has carrots and peas)

  • 1 tsp this is garlic

  • 1 egg

  • 4 Tbsp low sodium soy sauce

  • 1 packet sun bird fried rice seasoning packet (Asian food aisle in grocery store)

*If you want to save more points skip the seasoning packet (6sp) and use a mixture of garlic powder, onion powder, salt & pepper.*


DIRECTIONS

  1. Spray pan with non-stick spray and add in both bags of frozen rice, salt and pepper to taste and cook on high until tender- stir frequently.

  2. Once it’s almost done, add seasoning packet, garlic and soy sauce.

  3. When it’s completely tender, push rice to one side of pan, whisk up your egg and pour onto clean side of pan.

  4. Cook it completely then break it up with your spatula and stir into rice.


Split pan evenly into four servings, enjoy!
