Buffalo Dill Chicken Salad



This recipe is one of those where I just told myself to "wing it" and it turned out great! Don't you love when that happens?! It' so fresh, packed with flavor and a bit of spice! Buffalo chicken and pickles are two of my favorites, so I figured we can't go wrong with chicken salad!


INGREDIENTS

  • 1lb cooked shredded chicken (I bought the pre-made from my grocery store but you can make your own or use a rotisserie!)

  • 1/2 Cup plain Greek yogurt

  • 2 Tbsp Buffalo Sauce (Franks brand is great, add to taste)

  • 1/4 Cup Dill Relish (Or chop up some pickles for bigger pieces!)

  • 2 Tbsp Dry Ranch Seasoning Powder

  • Black pepper to taste


DIRECTIONS

  1. Combine all of the ingredients into a bowl and mix well.

  2. Taste test to make sure its to your liking, enjoy on a sandwich, cracker, cucumber slice, or by itself!


This is the perfect no-cook cold lunch and great for an adult lunchable!


Yields 4 servings at 211 calories & 37g protein
