These crispy breakfast taquitos were just a random Saturday creation with what we had on hand and oh man, they're amazing! I love when recipes just create themselves, this will definitely be a staple in our home! Its a quick and easy breakfast idea with protein and lots of flavor!
INGREDIENTS
2 Joseph's Lavash Flat Breads
3 Eggs
1 1/2 cups Frozen Diced Potatoes
2 Cups Fresh Spinach, chopped
4 Jimmy Dean Turkey Sausage Patties, cooked & diced (I used the frozen ones)
Seasoning to taste (I used Cavender's Seasoning and it was great!)
DIRECTIONS
Cook potatoes in a skillet until golden brown then add in the eggs and scramble them in the same pan with the potatoes.
Add in cooked diced sausage and the chopped spinach, mix and season well.
Cut each Lavash in 4 pieces, one hamburger cut and one hot dog cut to create small rectangles
Fill each one piece with some of the mixture and roll up like a taquito (I did not fold in the ends)
Air-fry at 360 degrees F for 3-5 minutes until the Lavash is golden and crispy!
Serve with hot sauce, yum!
Yields 8 taquitos at 117 cals each (8g protein!)
