Beef & Rice Bowls



I've been loving these delicious beef and rice bowls for meal prep and for a quick and easy dinner on a weeknight! You can really use any sauce you like and get creative with the veggies! This simple meal has a lot of protein and tastes great leftover which is really the key to a good meal prep recipe!


INGREDIENTS

  • 1 lb ground beef or ground turkey

  • Veggies of choice, I use 2 to 3 zucchini's

  • 2 cups cooked rice

  • 1/2 cup Mongolian Garlic sauce (from Target) or any sauce you like

  • 2 Tbsp Soy Sauce

  • Salt & Pepper to taste


DIRECTIONS

  1. Brown ground beef in a skillet

  2. While the meat is browning, chop your vegetables and saute them over medium heat, season with salt and pepper & cook until tender

  3. Once beef is cooked drain off any excess fat then return the beef to the pan

  4. Add in 1/2 cup sauce to the beef and stir until combined

  5. Once veggies are tender add in a tablespoon or 2 of soy sauce

  6. Divide beef into 4 containers, add in veggies and 1/2 cup cooked rice to each one.

  7. Serve immediately or refrigerate up to 4 days and reheat for 1 to 2 minutes in the microwave for meal prep!

Yields 4 servings at 494 calories & 35g protein.
